I have to ask myself, what do I like about this spice cinnamon?! I like the burn, that slight tingle it leaves on my tongue. Both refreshing and cleansing at the same time. Cinnamon is a spice that is also naturally sweet which is a fantastic benefit. Personally, I try to stay away from sugars and many artificial sweeteners. This has allowed my taste-buds to appreciate sweetness even from unexpected sources. That said, we’re talking super sweet – it really depends on the amount of time you allow cinnamon to steep in hot water, as well as the quantity of cinnamon you steep.

Using our beautiful teapots with spice cage inside, I break about 2-3 cinnamon rolls into the spice cage and seal. Then I fill the teapot with just freshly boiled hot water. I leave it overnight, to seep and to cool down. The next morning, there’s a cool amber tea waiting for me in my study. Sometimes that goes with me on my morning walk. This helps me get to my liquid intake easily without feeling the urge to add honey or sweeteners to my drinks. In addition, I incorporate the cooled liquid into my fresh celery juice and smoothies.
